Orchard fruit leads: crisp apple and ripe nectarine, lifted by a bright squeeze of citrus. Underneath sits honey and a thread of light peat smoke, the kind that drifts rather than settles. Sea salt runs through everything, and a flick of chili pepper warms the back of the palate before the smoke returns.
This is an 11 year old single malt from the Isle of Skye, matured in first-fill ex-bourbon casks and bottled at cask strength. Those casks are doing plenty of work here, keeping the fruit forward and the sweetness clean while the coastal character pushes back against it.
At 110.2 proof (55.1% ABV) it drinks with real intensity, and the pepper sharpens if you take it undiluted. A few drops open up the honey and the softer stone fruit without flattening the salt. 750 mL.
