The Yamazaki 25 Year Old Single Malt Japanese Whisky is a scarce vatting of malts aged more than 25 years at Yamazaki Distillery in Osaka Prefecture. American, Spanish, and Mizunara oak all play a part; the Japanese oak turns that long rest into sandalwood, incense, and a smoky wood perfume. A few thousand bottles leave the distillery each year. Bottled at 86 proof (43% ABV). Sipping with friends.
Mizunara incense and kaki persimmon lead, with tart ume plum behind them. Sandalwood and gentle ginger stand out on the palate; the mouthfeel is deep and unhurried, and the finish stays long on smoky, subtly sweet wood.
