Willett 8 Year Old Wheated Kentucky Straight Bourbon Whiskey is a limited small-batch Bardstown wheater: distilled in 2013 from a mash of 65% corn, 20% wheat, and 15% malted barley, entered at 115 proof into No. 4 char American oak, then bottled at eight years and 108 proof without chill filtration. Wheat in place of rye is what softens the grain into pastry and dark fruit. Save it for a fireside sip.
Cherry and honey lead, with cinnamon-roll pastry and clove filling a thick, coating sip. Vanilla and candied dark fruit stand out on the palate. Cinnamon, oak, and late toffee hang on a long finish.
