Bushmills 21 Year Old Single Malt Irish Whiskey is the Madeira-finished single malt from Old Bushmills in County Antrim, bottled at 80 proof in limited, numbered quantities. Aged 21 years, it spends at least 19 years in Oloroso sherry and bourbon casks, then two years in Madeira, long enough for the Portuguese wine casks to add ripe fruit and raisin while vanilla, nuts, and oak stay in the glass. Triple distillation keeps the body smooth under that fruit. Whisky Advocate scored it 96.
Honey, sultana, date, and brown sugar open it, with walnut, chocolate, and a little leather. The mouthfeel is syrupy: forest honey, banana bread, browned butter, and blackberry. The Madeira finish stays smooth and sweet for a long time, with raisin and vanilla still there at the end.
