Ardbeg Fermutation is a 2022 Committee exclusive: 13 years, 98.8 proof. In 2007 a dead boiler left washbacks sitting; Bill Lumsden opened the lids to the air and let the wash ferment three weeks instead of 72 hours — the longest fermentation in the distillery’s history. That mutant ferment is why it tastes floral, tart, and zingy instead of heavy tar.
Smoked orange, grapefruit, menthol, malt biscuit, and aniseed, then mint, tar, and oak. Zingy rather than heavy, with a salty, firm finish.
