Barrell Cask Finish Series: Amburana Bourbon Whiskey
Barrell Cask Finish Series: Amburana Bourbon Whiskey is a limited 2023 blend, Edition 001, about 14,400 bottles, bottled in Kentucky at 116.42 proof. Straight bourbons aged 5, 6, 7, and 10 years from Indiana and aged 5 years from Kentucky — two mashbills and two char levels, a derived mashbill of 75% corn, 21% rye, and 4% malted barley — were finished in true 53-gallon Amburana casks. That Brazilian hardwood throws cinnamon, clove, nutmeg, and vanilla in a hurry. Chief whiskey scientist Tripp Stimson spent a year timing the finish, then folded unfinished barrels back into the blend so the spice stays a layer on the bourbon.
The texture is rich and buttery, and the cinnamon runs through the glass without turning harsh. Gingerbread, honey, and graham cracker meet clove and ginger beer, with tarragon keeping the wood honest. Breaking Bourbon found it easy to chew, then a long finish of allspice, brown sugar, and a bright citrus spice.
