Bushmills Rare Casks No. 2 29 Year Old Pedro Ximénez Single Malt Irish Whiskey
Bushmills Rare Casks No. 2 29 Year Old Pedro Ximénez Single Malt Irish Whiskey is a single malt from Bushmills in County Antrim, triple-distilled in copper pot stills on April 6, 1992. It spent 12 years in first-fill Oloroso sherry casks and bourbon barrels, then was married and finished for 17 years in Pedro Ximénez sherry casks. Pedro Ximénez is the sweetest style of sherry, and that long rest is why the malt turns syrupy with fig, date, and roasted nut. Five hundred bottles were released. The U.S. trade listing is 103.2 proof. The published reviews were tasted at 53% ABV. Those are not the same strength.
Bushmills tastes roasted cashew and hazelnut, fig, date, and dried apricot, then sourdough, grapefruit, aged balsamic, and orange marmalade, with a long finish of cedar, vanilla bean, and cocoa. The 53% reviews found a syrupy mid-palate of black cherry, prune, stewed plum, and raspberry, with peppercorn, clove, and licorice, more oak as the sweetness fades, a round oily body, and a long dark-fruit finish.
