Caballito Cerrero makes this unaged agave spirit in Amatitán, Jalisco, from Chato agave — a variety you rarely see named on a label. It is additive free, and it drinks like it: nothing rounds off the edges or sweetens the corners.
Cooked agave sits at the center, sweet and vegetal the way agave is when it comes out of the oven rather than out of a flavoring bottle. Citrus and green herbs brighten the top, while a stony, mineral streak runs underneath and keeps everything taut. Black pepper and a warm, earthy spice hold the close. At 110 proof (55% ABV) the intensity is real, but the spirit stays clear-headed rather than hot.
Good neat in a small pour, and it has the backbone to stand up in a bracing highball or a spirit-forward cocktail. 750 mL.
