Castle & Key 7 Year Old Cask Strength Wheated Bourbon Whiskey Batch 1 2025 108.2 Proof is the first time Castle & Key has bottled its wheated bourbon straight from the barrel, at 108.2 proof. It was distilled, aged, and bottled at the restored Old Taylor distillery in Frankfort. The mash is 73% white corn, 10% white winter wheat, and 17% malted barley, filled at 107 proof so the grain stays ahead of the oak, then aged 7 years. Lead blender Brett Connors has pointed to that white winter wheat for the sweet roundness that is still there after 7 years undiluted. Batch 1 was announced as 109 barrels.
Oatmeal raisin cookie, vanilla frosting, and baked peach lead into butterscotch and baking chocolate. The body is creamy, and it drinks softer than the proof. The finish runs long and warm, brown sugar and roasted walnut giving way to French toast.
