Chattanooga Whiskey Michigan Maple Syrup Cask Finished Straight Bourbon Whiskey is the seventh limited release in the Barrel Finishing Series, bottled at 95 proof. It spent 1 year of a life longer than 4 years in late-harvest maple syrup casks from BLiS in Grand Rapids, filled with old-growth, end-of-season Michigan syrup. Under that, founding distiller Grant McCracken blended Barrel 91, all caramel and honey malt, with Barrel 76, whose slow-toasted aromatic malts already taste like maple candy and chocolate malt. The malt meets the syrup halfway, so the maple reads as flavor in the bourbon.
Maple candy, sweet potato, and malted milk ball are the core, with charred oak and an amaretto note from the malt. The maple stays integrated. The finish moves through molasses and coffee, with a thread of smoke.
