Copper distillation and cold-climate aging are the point: the spirit is meant to come up smoother and fruitier than a hot-warehouse malt, and it is bottled at 90 proof. Worth keeping around for slow sips and simple cocktails.
Creamy vanilla and banana open, with caramel and green apple behind them and a light nuttiness in the middle. Cinnamon warms the close, the texture stays creamier than the delicate nose suggests, and a moderate spice linger of oak and pepper finishes the sip.
