Dark Arts Whiskey House Amburana Oak Stave Finished Small Batch Rye Whiskey is the ongoing 108-proof rye from the Lexington blending house: Indiana 95% rye / 5% malted barley, aged at least six years, then finished for the last weeks on custom-toasted Amburana staves. Staves rather than barrels keep the Brazilian wood’s gingerbread-cinnamon from burying the grain — the same wood Ripple Rye uses. A generous sipper when the weather turns and the evening stretches.
Cinnamon sugar and gingerbread lead, with apple and vanilla behind them like warm pie. Caramel sweetens the middle, toasted coconut and red fruit show on a long finish, and rye spice stays in the grain so the wood never turns into candy alone.
