De Luze Extra Fine Champagne Cognac
Fine Champagne Cognac is a blend drawn only from the Grande and Petite Champagne crus, and this Extra sits at the older end of what that name can offer: at least 35 years in French Limousin oak, built entirely from Ugni Blanc.
Time shows up as texture first. The spirit is soft and slightly viscous, carrying candied orange over a darker seam of fig. Cocoa and walnut follow, dry where the fruit is sweet, and the long walnut-and-rancio character that only comes with decades in wood settles underneath it all. Vanilla rounds the edges rather than sweetening them, and at 80 proof (40% ABV) nothing is sharp.
This is a Cognac for an ordinary evening you want to treat as something more. Serve it at room temperature in a tulip-shaped snifter, neat, with no ice to mute the rancio. The 750 mL bottle pours generously without asking for an occasion.
