El Dorado 15 Year Old Ruby Port Cask Finished Demerara Rum

This is a Demerara rum with a fruity twist. Fifteen years in Guyana's humid climate, where rum matures faster than it does in cooler places, build the deep caramel base you expect from the region. A finishing period in Ruby Port casks adds the rest.

Red berries and plum come through clearly, sweet but not syrupy, sitting over caramel that gives the rum its weight. Cocoa turns up further in, dry enough to keep the fruit in check, and vanilla and oak spice run through the finish. At 86 proof it drinks easily on its own, and it holds up well over ice without going flat.

Guyana's Demerara rums are molasses-based, and this one keeps that familiar richness while the Port cask pulls it toward darker fruit. A useful bottle to have open on the shelf: comfortable to sip after dinner, sturdy enough for a rum old fashioned. Sold in a 750 mL bottle.
