Hibiki 21 Year Old Blended Japanese Whisky is Suntory’s 21-year blend of Yamazaki and Hakushu malts with Chita grain, every drop aged at least two decades in American bourbon oak, European sherry casks, and Japanese Mizunara. That long wood is why cooked fruit and temple incense share the glass, and why this 86-proof (43% ABV) whisky is so tightly allocated. The 24-facet bottle marks the seasons of the traditional Japanese calendar. Pour it as an after-dinner dram when you want the room to go quiet.
Cooked fruit, blackberry, and ripe banana open over caramel. The palate is nectarous—honeycomb, dried apricot, and sandalwood—then a long, rich finish of Mizunara incense and gentle oak spice.
