Hibiki 21 Year Old Blended Japanese Whisky is the House of Suntory prestige blend: Yamazaki and Hakushu malts with Chita grain, all aged at least twenty-one years in American oak and European sherry casks, then married with Mizunara, and bottled at 86 proof. Long Mizunara time is why incense and sandalwood show up beside cooked fruit instead of simple vanilla oak. Allocated and still produced in small volume. Pour it when you are sipping with friends.
Cooked fruit, blackberry, and ripe banana meet caramel on a nectarous sip. Sandalwood, honeycomb, and dried apricot follow, and the finish is long, rich, and incense-scented.
