High N’ Wicked The Wild Rover Cask Strength Double-Wood Single Malt Irish Whiskey is Singular Limited Release No. 2: triple-distilled Royal Oak malt from County Carlow, aged in ex-bourbon casks, then eight months in 300-liter Pedro Ximénez sherry wood. About 1,000 nine-liter cases, released August 2021, bottled at 117.4 proof (58.7% ABV), non-chill filtered, with no additives. The PX is why it drinks like dessert at barrel strength. Save it for a late pour when dried fruit should still be in the glass.
Caramelized apple and pear open with fig, toffee, and pie crust. Dutch apple pie, brown butter, fig jam, and honeyed brioche coat a full palate; baking spice and a long, smooth nuttiness carry the heat.
