Hillrock Solera Aged Bourbon Whiskey is Ancram's four-tier cascade, running since 2012: whiskey steps from new charred oak through older barrels, then a short rest in 20-year-old Oloroso sherry casks, with no more than half drawn so some of every batch stays in the system. That lingering older whiskey, plus the sherry wood, is why dried fruit and walnut sit on a 92.6-proof bourbon. Open it on a cold night.
Dark cherry and fig lead, sweet but grounded by walnut and a little salty pretzel crunch. Raisin, milk chocolate, and dried apricot fill the middle. The close is warm caramel and butterscotch, with clove and cinnamon hanging on.
