Midleton Dair Ghaelach Single Pot Still Irish Whiskey
Midleton Dair Ghaelach Single Pot Still Irish Whiskey is Midleton Distillery’s limited Irish-oak series from County Cork, Ireland: single pot still whiskey matured in ex-bourbon casks, then finished in virgin native Irish oak hogsheads from individually selected trees — Dair Ghaelach means Irish oak. That wood runs higher in vanillin, so vanilla, caramel, and chocolate show up beside classic pot-still spice. Non-chill filtered and bottled at cask strength, typically 112 to 117 proof depending on the tree. Pour it as an after-dinner dram.
Orchard fruit, honey, and clove lead, with coffee and toasted wood adding roast on the back. Vanilla and milk-chocolate sweetness round a luscious, spicy mouthfeel. The finish is long, with pot-still spice hanging on.
