Noah’s Mill Small Batch Kentucky Straight Bourbon Whiskey 114.3 Proof is Willett Distillery's high-malt small batch from Bardstown: 72% corn, 13% rye, and 15% malted barley, entered at 125 proof and bottled by hand at a fixed 114.3 proof. That extra malt is why walnuts, floral lift, and burnt caramel show up in a lush, full sip. Current vattings draw on Willett's own whiskey. Use it in a spirit-forward cocktail.
Walnuts, prunes, and lavender lead, with brown sugar, tobacco, and baking spice behind them. The mouthfeel is velvety and chewy. Cinnamon and burnt caramel linger on a long, warming finish.
