Old Elk 5 Year Old Oloroso Sherry Cask Finish Straight Bourbon Whiskey is the Fort Collins Cask Finish Series take on Greg Metze’s high-malt bourbon — 51% corn, 34% malted barley, 15% rye — aged five years in new charred oak, then rested in Oloroso sherry casks. Four times the usual malt is what you taste as light sweetness and bread-pudding vanilla, while the sherry is the dried stone fruit. Bottled at 109.7 proof (54.85% ABV). Pour it over a large cube.
Dried fruit, caramel, and floral notes open, then dark stone fruit, caramel, and rye spice fill a full-bodied sip. Nuts, vanilla bread pudding, and spiced cocoa hold a long finish. It drinks rich for the proof, with sherry fruit sitting clearly on the palate beside the malt-heavy bourbon.
