Old Elk Wheated Bourbon Whiskey is Greg Metze's wheat mash on the Fort Collins label: 51% corn, 45% wheat, and 4% malted barley — roughly twice the wheat of a typical Kentucky wheater — Slow Cut to 92 proof so the cream and toffee stay intact. Five years in new charred oak is enough wood without burying the grain. This is an easy pour for a quiet evening.
Toffee, vanilla ice cream, and caramel open, with floral lift and toasted almond. Clove and a little dark cherry give the sweetness an edge. The mouthfeel is velvety and mellow; the finish is long and soft, with butter-pecan cookie and a gentle warm spice.
