The mash is 72% corn, 18% rye, and 10% malted barley; those barrels were pulled for raspberry, blackberry, and strawberry sitting in dessert oak. Pour it when the meal is done.
Raspberry preserves, blackberry, and dried strawberry open on vanilla creme brulee, pecan, maple, and cocoa. The mouthfeel is velvety, carrying buttery caramel, burnt sugar, and Linzer cookie before peppery spice. The finish is long and warm, chocolate, raisin, and oak spice lingering with a cool herbal edge.
