Penelope 17 Year Old American Light Whiskey is a limited 2025 bottling of 2006 Seagram’s distillate from Lawrenceburg, Indiana — now Ross & Squibb — run up to 189 proof, then aged 17 years in second-fill oak so the wood stays gentle instead of char-heavy. The mash is 99% corn and 1% malted barley, bottled uncut at 138.8 proof. Pour it over a large cube.
Butterscotch, cake batter, and brown sugar lead, with vanilla ice cream, honeycomb, and cinnamon frosting through a surprisingly creamy sip for the proof. Toffee and light orchard fruit sit in the middle. The finish is long and warm: waffle cone, nutmeg, and a savory trail-mix earthiness that keeps the dessert notes from cloying.
