This barrel was distilled on a column still in West Virginia with a high-wheat mash, aged there, and bottled at 131.32 proof. That wheat mash is what you taste as crème brûlée, brown sugar, and wheat bread, with nine years of char adding toasted wood and baking spice. It is a cold-weather pour.
Crème brûlée, strawberry jam, and fresh bread lead, then vanilla cake batter, maple, and sticky toffee fill a silky sip with dried berries, pipe tobacco, nutmeg, and cinnamon. The finish is long: toffee, caramel, toasted bread, and light fruit. At this proof it has real weight, but the wheat keeps the heat from feeling harsh.
