Redwood Empire Pipe Dream Cask Strength Bourbon Whiskey

Redwood Empire Pipe Dream Cask Strength Bourbon Whiskey is bottled uncut from Northern California barrels at 116.8 proof and named for one of the world’s tallest redwoods. A four-grain mash — mostly corn, with rye, malted barley, and wheat — rests at least four years, with older whiskey in the blend up to twelve, in 53-gallon char-#3 oak. Slow fog-belt aging lays down toffee, cherry, and soft leather instead of a wall of young heat. Give it a large cube.

Toffee and cherry cola lead, then honey, butterscotch, and pecan. Soft leather, a little tobacco, and baking spice ride through a long, oily finish. It is a rich, spicy sip at cask strength, with enough sweetness to stay generous after the cube melts.
