Ron Centenario makes rum in San José, Costa Rica, and this bottling is solera-aged in oak, a system that keeps older and younger spirit in contact so the character builds gradually. Thirty years is a long stretch in a warm climate, where rum matures faster than it would in a cooler place, and the result is soft and dark rather than sharp.
Caramel and vanilla sit right at the center, thick without being sticky. A twist of citrus lifts the opening, then mocha turns the whole thing toward coffee and cocoa as it goes. Dried fruit and polished oak see out the finish, dry enough to keep the sweetness in check.
At 80 proof (40% ABV) it drinks easily on its own, and it takes a single large cube without falling apart. A straightforward sipping rum in a 750 mL bottle, good for after dinner or a quiet evening.
