Seelbach’s Private Reserve The Beekeeper Honey Finished Straight Bourbon Whiskey is a limited Indiana bottling: Lawrenceburg 75/21/4 mash finished more than four months in barrels infused with wildflower honey from White Oak Pastures in Georgia, then bottled in Jacksonville at 113 proof. The honey went into former 20-year light-whiskey casks, so floral sweetness picks up aged oak and vanilla instead of turning the bourbon into candy. Use it in a spirit-forward cocktail.
Brown sugar, candied ginger, and Bit-O-Honey lead, with pecan and clove. A syrupy sip brings Honeycomb cereal, orange zest, cracked pepper, and oak spice. Orange bitters, blackberry jam, and toasted cinnamon stick close a clean finish.
