Shibui 10 Year Old White Oak Single Grain Japanese Whisky is Masahiro Distillery rice whisky from Okinawa: premium indica long-grain rice, fermented with Okinawan black koji, double-distilled in stainless-steel pot stills, then ten years in virgin European white oak, non-chill-filtered at 86 proof (43% ABV). Black koji and new white oak are why whipped cream and sea-salt caramel read like a bakery. Pour it over a large cube.
Whipped cream and tropical fruit lead, with sea-salt caramel and coconut underneath. Dried fruit, vanilla, and clove stand out on the palate; the body is gentle and rounded, and the finish runs long on cranberry, orange fondant, and a flare of spice.
