Raisin and fig open with dark, concentrated sweetness, while dark chocolate adds depth and walnut gives the finish a dry, savory turn. From Okinawa, Shibui is a single grain Japanese whisky aged 18 years. Its fruit and darker notes make a warm, grounded combination without losing definition.
Ex-bourbon maturation is followed by an Oloroso sherry cask finish, bringing two distinct cask influences to the whisky. At 80 proof (40% ABV), it is well suited to a neat pour; a large cube offers a cooler, slower serve. The 750 mL bottle is a practical size for opening over several evenings or sharing after dinner. Pour modestly, and allow a few minutes before the first sip.
