Shibui 18 Year Old Sherry Cask Single Grain Japanese Whisky is Kumesen Distillery indica-rice whisky from southern Okinawa: black-koji fermentation, a single pass through a stainless-steel pot still, then eighteen years in refill fino and manzanilla sherry casks, non-chill-filtered at 80 proof (40% ABV). One distillation and those lighter sherries are why cherry and citrus stay bright after the long rest. An after-dinner dram.
Red cherry, milk chocolate, and dried cranberry lead, with toffee and licorice underneath. Walnut and fresh fig stand out on the palate; the body starts light then turns creamier, and the finish runs to lime, green melon, and a long chocolate close.
