Starlight Distillery Single Barrel Bourbon Whiskey

Starlight Distillery Single Barrel Bourbon Whiskey is one cask of Indiana farm bourbon from the Huber estate in Starlight: sweet-mash distillate from the house 3-grain and 4-grain mash bills, run through copper pot stills and aged in new charred oak on the seventh-generation farm. The distilling team bottles that barrel uncut and without chill filtration, so caramelized sugar and baking spice stay as they came off the wood. Pour it over a large cube.

Caramelized sugar and vanilla lead, with dried fruit and baking spice filling a rich, unfiltered sip. Toasted oak and a thread of rye spice keep the sweetness in check. Oak, spice, and a last flicker of caramel hang on a long, warming finish.
