Tullamore D.E.W. Phoenix Limited Edition Irish Whiskey is a numbered, non-chill-filtered blend of grain, malt, and pot-still Irish whiskey, finished two years in old Oloroso sherry casks and bottled at 110 proof (55% ABV) so pot-still spice and sherry nuttiness have weight. Named for the phoenix on Tullamore's coat of arms after the 1785 balloon fire, it is built around a high share of pot still through that sherry rest. Pour it when the weather turns.
Warm spice, toffee, and vanilla lead, with toasted oak and sherry nuttiness filling a creamy, tingling sip. Caramel and delicate floral notes stand out on the palate; the finish is long and warming.
