Very Olde St. Nick Ancient Cask Immaculata Bourbon Whiskey
Fifteen years in new charred American oak is a long stretch for a Kentucky bourbon, and the barrel leaves its fingerprints everywhere on this one. Bottled at cask strength, undiluted, it comes out of the barrel thick and dark, with the kind of weight that only comes from time against char.
Caramel leads, but it is the darker end of caramel, closer to burnt sugar than candy. Underneath sits dark fruit — stewed plum and fig — with tobacco and leather trailing behind it. Cinnamon flickers through the back half, and mature oak settles over everything without turning bitter or drying.
At 118.1 proof there is real heat here, so a single large cube suits it well and opens the fruit without washing out the spice. The 750 mL bottle drinks like something worth saving for a good evening, though it holds up just as well on an ordinary Tuesday.
