Raisin and fig come through first, dark and sweet without being heavy, and honey rounds them out before a run of rye spice tightens everything up. Chocolate sits underneath, quieter than the fruit but easy to find once you go looking for it.
Twelve years is a long time for rye, and the extra maturation in Madeira, Sauternes and Port casks is what pushes this one toward the fruit-forward end of the category. At 86 proof it drinks softly, so nothing needs to be tamed. Rye whiskey distilled in Alberta, finished and bottled in Vermont.
This is a straightforward pour for most evenings: neat if you want the vanilla and the sweeter notes up front, over ice if you would rather the spice lead. It also holds its shape in an Old Fashioned, where the dried fruit does some of the work sugar usually does. 750 mL.
