WhistlePig The Béhôlden 21 Year Old Single Malt Whiskey is 100% malted barley from Glenora Distillery on Cape Breton, Nova Scotia — 21 years in American oak ex-bourbon barrels, then four weeks in WhistlePig rye barrels. The long bourbon wood turns the malt toward maple, golden raisin, and graham cracker; the rye casks add savory spice and a hint of smoke. Single barrel, bottled at 92 proof (46% ABV). A slow evening sip.
Golden raisin, graham cracker, and black cherry lead, with maple and praline behind them. Cinnamon and stone fruit stand out on the palate; the mouthfeel is creamy and full, and the finish lingers on oak, clove, and subtle smoke.
