WhistlePig The Boss Hog VI The Samurai Scientist Straight Rye Whiskey is a 16-year single-barrel rye fermented with koji — the mold method chemist Jokichi Takamine tried to bring to American whiskey — then finished in Japanese umeshu barrels from Kitaya on Kyushu. Plum liqueur wood moves cinnamon, maple, and a savory umami depth onto already-old Canadian rye. Bottled undiluted at cask strength. Pour it when the stove is on.
Cinnamon, maple, and toasted marshmallow lead, with tobacco and ginger behind them. Baking spice and ripe plum stand out on the palate; the sip is rich and high-proof, and the finish runs long on oak char, umami, and a thread of smoke.
