Wyoming Whiskey Double Cask Bourbon Whiskey is the Kirby, Wyoming wheated bourbon — 68% corn, 20% wheat, 12% malted barley — aged five years in new charred oak, then finished in decades-old Pedro Ximénez sherry casks. Extreme Big Horn Basin heat and cold drive the first maturation; the PX wood adds dried apricot, fig, and toffee, bottled at 100 proof (50% ABV). It is a slow evening pour.
Dried apricot, fig, and date lead, with stewed prune, raisin, and candied orange peel filling a rich, slightly sticky sip. Vanilla buttercream and toffee stand out on the palate; dark dried fruit and warming baking spice ride the finish.
