5 Sentidos Tobalá Mezcal
Bottled without an age statement, as most mezcal is, this Oaxacan spirit is made from Tobalá agave, a small wild variety that takes years to mature and yields very little per plant. The agave is roasted in an earthen pit, then distilled by hand — the traditional method that gives mezcal its gentle smoke.
Ripe fruit and citrus come through clearly, with a floral lift sitting just behind them. Underneath there is something greener and drier: fresh herbs, and a stony mineral edge that keeps the sweetness in check. The smoke is soft rather than heavy, more a texture than a flavor, and it lingers after the fruit has faded.
Additive free, so what you taste is agave and fire and nothing else. Sip it neat at room temperature from a small cup, the way it is drunk in Oaxaca. 750 mL.
