Calumet Farm 16 Year Old Single Rack Black Kentucky Straight Bourbon Whiskey
Calumet Farm 16 Year Old Single Rack Black Kentucky Straight Bourbon Whiskey is the Citation edition, bottled at 106 proof and left non-chill filtered. It is another 19-barrel, single center-cut rack, from bourbon the brand lists as distilled and aged in Bardstown and barreled in March 2006, bottled by Three Springs in Bowling Green. The mash is 74 percent corn, 18 percent rye, and 8 percent malted barley. Aged 16 years, the oak is drier: saturated wood, rye spice, and tannin lead, and the sweetness that remains is molasses, cocoa, and toasted toffee. It is released in those small racks and has stayed easier to find than a one-time allocation.
Breaking Bourbon tasted melted caramel, stewed apple, and sweet bread, then hazelnut, molasses, and cocoa, with a dry finish of aged oak, tobacco leaf, and clove. The brand adds cherry, dark fruit, baked bread, and toasted toffee, and a close of toasted grain and smoke. Oak, tobacco, and baking spice stay after the fruit drops away.
