Caol Ila 12 Year Old Islay Single Malt Scotch Whisky is Caol Ila’s core single malt, aged 12 years and bottled at 86 proof. The distillery sits at Port Askaig on Islay, looking across the sound to Jura, and this whisky is distilled from peated malt and matured in ex-bourbon casks. The peat arrives as a light fragrance, so citrus, sweet malt, and coastal salt still lead a whisky that most of the island’s heavier malts would smoke over.
Diageo’s notes open on citric fruit, then a sweet start, light fragrant smoke, and a little salt, in a smooth, light-to-medium body, with a lingering sweet smoke that turns slightly sour. Whisky Advocate found seashore, grass, and smoked bacon, the peat running through without taking over, and a real oiliness. Citrus, soft peat, salt, and that oily sweetness are the notes that keep returning.
