Cazcanes No. 7 Extra Añejo Tequila
Jalisco is where this one begins, with Blue Weber agave grown and cooked for an extra añejo that spends over three years in wood. The maturation runs mostly in re-charred American oak, with a small portion finished on French oak staves. Both are additive free and certified organic, which shows in how clean the agave reads through all that time in barrel.
Cooked agave is still the center of it, sweet and vegetal, ringed with honey. Around that sits something closer to apple pie: warm fruit, cinnamon, a little pastry richness. Toffee and vanilla fill in the weight, and coconut lifts the back end before the oak settles quietly underneath.
At 80 proof it drinks softly, which makes this an easy pour after dinner rather than a bottle that needs managing. The 750 mL is worth keeping within reach.
