Chattanooga Whiskey Silver Oak Cabernet Cask Finished Bourbon Whiskey is, on the distillery’s label, a straight malt whiskey finished in Cabernet Sauvignon casks. It is the third limited release in the Barrel Finishing Series, bottled at 95 proof at the Riverfront Distillery. Five barley mash bills from Riverbend Malt House in Asheville supply toasted, roasted, and caramel malts, thyme, cacao, and blackberry among them. More than 4 years of age include more than 18 months in used Silver Oak casks from the Alexander Valley, which lay red fruit and toasted-oak spice onto that malt. Non-chill filtered, from 6 to 8 barrels.
Mixed berry, toasted oak, thyme, and molasses open into dark chocolate and baking spice. The body is juicy, then the finish lengthens on malt, pepper, and a Cabernet tannin.
