Chicken Cock Double Oak 8 Year Old Kentucky Whiskey is aged 8 years and bottled at 92 proof, and it is whiskey rather than bourbon for a reason. Seven of those years were in used bourbon barrels, a holdover from the 2014 barrel shortage, then the whiskey spent about 18 months in new white American oak with a level 4 char, on the top floor of a Bardstown Bourbon Company rickhouse through one of the hottest Kentucky summers on record. That second barrel is what puts caramel, vanilla, and char into a whiskey the first wood had kept lighter. The mash is 80.5% corn, 11% rye, and 8.5% malted barley.
Dark chocolate and berry lead, with caramel, toasted coconut, and vanilla. Cinnamon and charred oak sit underneath. The mouthfeel is round and creamy, and the finish lands on crème brûlée with a dry oak edge.
