Green apple and lemon share a fine bubble, a little brioche under the citrus. Light and brut, the dosage is modest and the wine wants a hard chill. Apple skin and a short yeasty dryness are what remain.
Codorníu, Cava, Spain; traditional-method brut, about a third each of Xarel·lo, Macabeo and Parellada; about 11.5% ABV; roughly 10 g/L sugar; made with organic grapes (CCPAE); 750 mL. Not the dealcoholized Zero and not Champagne.
Ice-cold in a flute, it suits olives or fried seafood. Open it this year.
