George Dickel 17 Year Old Reserve Cask Strength Tennessee Whisky
George Dickel 17 Year Old Reserve Cask Strength Tennessee Whisky is a limited 17-year whisky from Cascade Hollow, bottled at 92 proof and still labeled cask strength — after seventeen years in single-story rickhouses, barrel proof can fall instead of climb. Nicole Austin chose casks to echo the sold-out 2016 Reserve (a Tennessee-only 375 mL at 43.5 percent); this 2022 return is the 750 mL. Mash is 84 percent corn, 8 percent rye, and 8 percent malted barley. A bottle you can open for guests without overthinking the pour.
Crème brûlée and apricot open, then plum, juniper, and sour cherry ride over vanilla cream and dried dark fruit. The palate is full and soft-oily: honey, toffee, leather, and toasted oak, with cedar and peppery tea-leaf tannin on a long, dry finish. Seventeen years of wood is all there; it just drinks polished rather than hot.
