Thirty years in oak usually dries a whisky out; the work here is keeping honey and fruit standing up to sherry and polished wood. Cask selection is the whole process — only barrels that still have something besides tannin make the vatting. Fits a cold-weather night as easily as an after-dinner dram.
Honey, apple pastry, and luscious sherry open against substantial oak, then fig, dark chocolate, dried fruit, and pressed flowers fill a woody, floral mid-palate. Vanilla and polished oak ride an exceedingly long, warm, honeyed finish. It drinks deep and composed at 86 proof: three decades of wood, still sweet enough to want another sip.
