Hillrock Estate Distillery Solera Aged Bourbon Whiskey is the Hudson Valley bottle that brought solera aging to American whiskey in 2012, under Dave Pickerell. New-make sits in new charred oak, then moves through older tiers so younger and older whiskey keep mingling — no barrel is emptied — and a draw is finished in 20-year-old Oloroso sherry casks, which is why fig and walnut show up on the bourbon. Bottled at 92.6 proof. Pour it over a large cube.
Cinnamon and oaked caramel-vanilla lead, with maple, brown sugar, molasses, and toffee filling a full, warm sip. Clove and roasted corn keep the sweetness in check. The finish is medium-long: caramel, butterscotch, walnut, and candied fruit from the sherry wood.
