Jack Daniel’s Coy Hill High Proof Single Barrel Tennessee Whiskey
Jack Daniel’s Coy Hill High Proof Single Barrel Tennessee Whiskey is the 2021 Single Barrel Special Release: uncut whiskey from the top ricks of barrelhouses 8 and 13 on Coy Hill, the highest ground on the Lynchburg property. Those attic barrels—filled on the 80 percent corn mash, charcoal-mellowed through ten feet of sugar maple—sat in dry heat for about nine years and came off at the highest proofs the distillery had ever bottled, 137.4 to 148.3 depending on the cask. Each bottle is one barrel, undiluted. Save it for a late-night dram when the room can take the heat.
Seared oak and dark brown sugar lead; banana bread, dark cherry, caramel, and baking spice fill a thick, syrupy sip. Toffee, leather, smoke, and cinnamon linger on a long, warming finish that still drinks sweeter than the proof suggests.
