Kilchoman Machir Bay Peated Islay Single Malt Scotch Whisky is the flagship from Rockside Farm, named for the long Atlantic beach west of the stillhouse. It is a vatting of about 90% bourbon barrels and 10% oloroso sherry, peated to 50 ppm and bottled at 92 proof, with all maturation on Islay. Bourbon casks keep vanilla, honey, and citrus in front of the peat; the small sherry share adds dried fruit. This is a weeknight Islay you can keep reaching for.
Lemon zest and vanilla meet peach, pear, and a clear coastal lift. Tropical fruit and sultana ride warming smoke, then honey and butterscotch. The finish is long: sea salt, cracked pepper, citrus, and maritime peat that stays bright rather than heavy.
